    I have some pretty big mothers at this point. I make 5 gallon batches. I have a wide-mouth glass carboy that I can reach into and collect the mother between batches and during cleaning. Probably yields about 4.5 gallons.

    I'm not familiar with Jun Teas. I will say that the carbonation in Kombuchas is certainly aided by additional sugars in a sealed vessel. I often use an empty Corny-keg and force carbonate with CO2. They I use a Blichman Beer Gun to bottle.
